Where the file goes

iPhone / iPad: Documents/env.txt (Files app, under the app's name). Fully close and reopen the app after editing.
Mac app: ~/Library/Application Support/nxnative/<title ID>/env.txt.

A setting set in the file shows greyed out on the settings screen and wins over your choice and the game's default. Not every game offers every setting; see Settings and your game's page. Leave a setting at "Not set" to follow the tested defaults.
